Nick and I have been planning to really begin working on our health, too. I'm interested in your new journal. Maybe I'll start one! We're going to do the diet in Alissa Cohen's book "Living on Live food" (http://www.alissacohen.com). She has a 1 month plan spelled out that I think we can manage. You only do food prep twice a week. The first time we tried to go raw we were only able to stay on a week or so because the food prep is extremely time consuming (lots and lots of chopping). The Cohen book has it all streamlined, includes a weekly grocery list and menu. The first few weeks have easy recipes to get you into the groove. Tammy M. does raw food and has had some amazing health results when she is on the diet. I'm hoping for the same. I like that you've left Sunday as your celebration day and that it doesn't have a specific eating plan. I think we'll need to incorporate that also. Are you going to do before and after photos?
